A World of Flavour
Following an after-take off cocktail service, start your meal with an appetizer, such as a trio of poached Nova Scotia lobster, marinated shrimp and sautéed scallop.
Next, choose from a selection of entrées like grilled Alberta AAA beef tenderloin with truffle and porcini sauce, potato au gratin, baby carrots and fine green beans or roasted Atlantic salmon with a Pinot Grigio sauce, barley risotto and a vegetable medley.
Finish with a selection of cheeses and a glass of port followed by a selection of decadent desserts and sliced fresh fruit from our presentation trolley.
A Culinary Journey
In addition to our Canadian-influenced and more traditional offerings, our menus often feature dishes sourced from other traditions such as chicken biryani, Thai green curry and Moroccan tagine.
Travelling to a destination in Asia? The journey begins in-flight with route-inspired dishes such as authentic Japanese meals on flights to Tokyo, noodle soups, dim sum and traditional Chinese and Korean dishes.
Want to spend a little more time working or sleeping, or just not hungry quite yet? Our Flexible Meal option allows you to enjoy any of the featured main courses, served with warm bread and butter, mixed greens, cheese, crackers and fruit, shortly after take-off or at any time during the flight.
To complement your dining experience, Ken Chase, a world-renowned oenologist, viticulturist and key collaborator for our wine program, chooses a selection of wines from some of the world's top vineyards for you to discover.
